INGREDIENTS:
2 ripe avocados
Juice of 2 lemon
Olive oil
Salt and pepper
Spice bag seasoning
2 small chillies finely chopped
Bunch fresh rocket
Bunch spring onion finely chopped
2 eggs per person
2 shop bought pitta or flatbreads
200g cherry tomatoes ¼
2 roasted red pepper chopped
Tsp cumin
½ shallot finely diced
METHOD:
1). Crush the avocado with the back of a fork and add the lemon juice, this will stop it turning a
blackish brown colour, season well with salt and pepper and add 3 tbsp olive oil.
2). Add the chopped chilli and coriander also, mix well and check for seasoning.
3). Add the finely chopped shallot, cumin, cherry tomato and roasted red pepper to a bowl and
drizzle with 200 ml olive oil, add a touch of salt and pepper. set aside to infuse and develop in
flavours.
4). Warm the flatbread in a dry pan
5). Add 2 tbsp of oil to a small pan and gently fry the eggs until cooked, season with a pinch of
spice bag seasoning or any chilli scented seasoning to give the eggs that little kick!!
6). Lay the flatbread on a plate, and spread the avocado on top generously, add the eggs and
garnish with the tomato pepper salsa.
7). Finish with some baby coriander and leaves and the crispy onion
