Ingredients
400g sirloin steak,
½ onion, diced, 2
cloves of garlic, crushed,
¼ stick of lemongrass,
olive oil,
2 tablespoons of mild curry powder,
3 heaped tablespoons peanut butter,
1 tablespoon soy sauce,
400g of coconut milk,
sea salt,
2 handfuls of dry roasted peanuts,
cracked black pepper.
Method
• Remove the streak from fridge 30mins before cooking.
• Sweat onion, garlic & lemongrass in oil in saucepan over medium heat for 1 min.
• Stir in curry powder and peanut butter.
• Add soy sauce & coconut milk, then turn up heat and bring to the boil.
• Simmer on low heat and add sea salt.
• Heat oil in large pan & season steak with sea salt and cracked pepper.
• Seal the steak for 2 mins on each side then turn down heat and cook for further 2 mins each side.
• Slice the steak up & add to satay sauce. Allow to cook for 5 mins in sauce at medium heat.
